Butterfly pea or Asian pigeonwings is a plant native to Asia and scientifically named as Clitoria ternatea. The most interesting feature is the colour of its flower, a brilliant blue, although some yield white flowers too. In southeast Asia the flower is used as a food colouring and as an Ayurvedic medicine.

Butterfly Pea Flower Tea

Butterfly pea tea is a tasty drink made of either dried or fresh flowers with an earthy taste and usually served after dinner, or as a refreshment either hot or cold. Tea can be served with honey, sugar, lemongrass, or lime juice. Adding lime juice will change the PH of the tea and bring a beautiful purple colour or even to red. This tea does not contain caffein and therefore a better alternative to regular tea and coffee.
